


1855 The first of several buildings in the Hart's Mill complex opened for business.
Captain John Hart was an English mariner who turned to land-based enterprises after the loss of 2 vessels under his command. In 1846 he moved to Adelaide and was an agent, drover as well as investing in the early copper mines of the colony. Hart entered parliament and served as Premier for 3 brief periods (1865 - 66, 1868, and 1870 - 71)
The mill was a collaborative venture with other investors. Hart's flour earned a reputation for quality throughout the colony and the British Empire due to its innovative way of milling which increased production, allowing employees more time to examine and ensure the quality of the flour. Among the mills 30 employees were several Kaurna people (it was uncommon at the time for indigenous workers to be hired in industry)
